Mac and cheese is the ultimate comfort food. There is just something so nostalgic and comforting about having a big warm bowl of cheesy, melty mac and cheese – that’s why I’m sharing this recipe for Gluten-Free Baked Mac and Cheese. It’s perfect for a weeknight dinner and the whole family will love it! There are a lot of boxed and frozen mac and cheese options, but like most things I make for my family, I wanted to make mac and cheese from scratch, with real, whole ingredients. I used gluten free pasta, but you can switch it out for regular pasta if you want. I used coconut milk for this recipe, but you can always switch it to cow’s  milk if you prefer it over a dairy substitute. If you swap out the cheese for vegan cheese, then the whole recipe will be vegan! The only thing is I don’t know how well the vegan cheese will necessarily melt to make the cheese sauce, but if you give it a try, let me know in the comments!

What can be bad about a mashup of a high protein chicken crust and Caesar salad?! Plus, this dish is  gluten-free and low-carb and perfect for a quick and easy dinner idea.

Ingredients:

Ceasar dressing

Steps:

  1. Mix the ground chicken, eggs, 1 cup grated parm. Season with salt, pepper, garlic powder and onion powder to taste. 

  2. Spread the ground chicken on either a round pizza pan or rectangle baking pan into a thin layer. You can make it round or rectangular shaped, whatever you're feeling!

  3. Bake 450F for 15-30 minutes, until cooked through and browned on top.

  4. Cut up romaine lettuce to top.

  5. Once pizza crust is cooked, spread on the Ceasar dressing.

  6. Add romaine and top with shaved Parmesan and more dressing (optional).
