These strawberry cheesecake bars were so delicious and come together so easily! The cheesecake is made with cottage cheese so you get some amazing protein there and they’re sweetened only with maple syrup, so no refined sugar!! You can use graham crackers or shortbread cookies for the base of the bars, I like to use gluten free graham crackers, these are my fave! I topped mine with crushed freeze dried strawberries and cookies and you can even add fresh strawberries on top to serve. The hardest part about this recipe is that you have to let it set in the freezer for about four hours… and waiting is hard when these strawberry cheesecake bars taste so good!!

These protein-packed strawberry cheesecake bars are made with cottage cheese and sweetened with maple syrup, for a delicious sweet snack that you don't have to feel guilty about!

Ingredients:

Steps:

  1. In a blender or food processor, combine cottage cheese, maple syrup, vanilla extract, and the strawberries. Blend until smooth and well combined.

  1. Pour the cottage cheese mixture into the mold. Smooth out the top with a spatula.

  1. Place the mold in the freezer and freeze for at least 4 hours, or until set.

  1. Once the cheesecake bars are set, remove them from the mold. You can keep them as-is or cut them into bars, depending what size you want.

  1. For the coating, crush the freeze-dried strawberries and cookies and coat the bars with the mixture.

  1. Garnish the bars with fresh strawberry slices before serving (optional).
