You know that I’m always looking to make healthier snacks and desserts at home and this single serve high protein superfood cheesecake is just that! Made with an egg, protein powder and cottage cheese, this cheesecake recipe is PACKED with protein. It’s also gluten-free, made with unrefined sugar (maple syrup only) and tastes so good!! If you want a sweet treat that you don’t have to feel guilty about, this is definitely going to be it.  I topped mine with a quick berry-chia jam and it was so delicious! Ingredients:

Steps:

  1. Preheat your oven to 375°F.

  2. Blend all of the ingredients for the cheesecake together.

  3. Pour into a ramekin and bake for 2 minutes, then broil for 1 minute. Remove from the oven and let it cool in the fridge.

  4. In a pan on medium heat, add the berries, chis seeds and maple syrup. Mix together and let reduce into a jam. Remove from the heat and let it cool.

  5. Once the jam is cool, pour on the cheesecake and serve.
