Making these protein antioxidant blue ice cream bites was so fun! I used butterfly pea flowers to turn them blue, so there's no artificial colors (if you know me, you know I am all about avoiding food coloring and other additives!). They're also made with avocado for creaminess and healthy fat and the protein powder of your choice for flavor and of course, protein. The base of the ice cream is coconut cream and you add coconut condensed milk for sweetness, so they're also dairy free/vegan! I had so much fun making these, and my kids had so much fun eating them, win-win all around! Are you going to try these?? Let me know in the comments!
These blue ice cream bites are packed with protein and full of antioxidants from the butterfly pea flowers. These treats are so delicious and pretty too!
Boil 1 cup of water and steep the butterfly pea flowers for about 5-10 minutes until the water turns blue. Strain and let it cool.
In a mixing bowl, combine the cooled butterfly pea flower water, coconut cream, coconut condensed milk, vanilla extract, protein powder, and mashed avocado. Mix until smooth.
Pour the mixture into ice cube trays or silicone molds. I used heart shaped silicone molds, but you can use any shape you want! Freeze for at least 4 hours or until solid.
Melt the white chocolate. Once the ice cream bites are solid, remove them from the molds and dip each bite into the melted white chocolate. Place them on a parchment-lined tray.
Allow the chocolate to harden at room temperature or in the fridge. Once the chocolate is set, your ice cream bites are ready to enjoy!
