Did you have Pop-tarts growing up?! I definitely did! These days I don’t think it’s something I would grab at the grocery store – the ingredients label reads like a laundry list and there are some ingredients I don’t love to have in my home. That’s why I decided to try my hand at gluten free homemade pop-tarts. This recipe is made with only a handful of ingredients like almond flour, coconut flour, coconut oil, eggs, vanilla and a natural liquid sweetener like honey or maple syrup. I made mine with a quick cream cheese frosting, but you can swap it out for any icing recipe you like. I wanted to go a little bit more classic and make pink pop-tarts, so I added strawberry jam to my icing to sweeten it up and get that pink color. I feel better giving these to my kids instead of the store-bought ones. There’s a little more work involved, but I think it’s worth it. Would you try this recipe??

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together the almond flour, coconut flour, honey or maple syrup, melted coconut oil, egg, vanilla extract, and salt until a dough forms.

  3. Divide the dough in half and roll out each half between two sheets of parchment paper to about 1/4 inch thickness.

  4. Cut the rolled-out dough into rectangles or squares (these will be the top and bottom of your pop tarts).

  5. Place half of the rectangles on the prepared baking sheet. Spoon a small amount of strawberry jam onto each one, leaving a border around the edges.

  6. Place a second rectangle of dough on top of each filled bottom piece and press down the edges to seal.

  7. Use a fork to crimp the edges of each pop tart.

  8. Bake in the preheated oven for about 12-15 minutes, or until the edges are golden brown.

  9. For the icing

    In a medium bowl, add the cream cheese and vanilla. Beat until smooth using a hand mixer or a whisk.

  10. Add in the strawberry jam and whisk together. If you prefer, omit the jam and add 2-3 tbsp of honey or maple syrup. You can also add milk or non-dairy milk (2-3 tbsp) at a time, if you want to thin the icing out.

  11. Once the pop tarts have cooled, spread a generous dollop of the cream cheese icing on top of each pop tart.

  12. You can also drizzle some extra strawberry jam on top of the icing for added flavor, if you want. I crumbled up Siete cookies, or you can do sprinkles!
