This gluten-free pizza casserole recipe is so great for when you’re craving pizza but don’t want the bread! It’s packed with protein from shredded rotisserie chicken, mozzarella cheese and grated Parmesan, plus, there’s tons of hidden veggies! I made mine with cauliflower rice, chopped broccoli and olives, but you can add any other veggies you like, like peppers or mushrooms. This recipe came together so quick and easy that it’s such a good option for a last minute weeknight dinner. I just recommend you let it cool down a bit before digging in, I didn’t because I couldn’t wait to try it, but learn from me and wait a second first!!

A twist on pizza! This gluten free pizza casserole is easy to make, packed with protein and veggies and is the perfect easy weeknight dinner recipe!
Ingredients:
Steps:
-
Preheat oven to 400F.
-
In a large pan, sauté the onion until translucent. Add the riced cauliflower, chopped broccoli, olives, and peppers. Cook until vegetables are tender.
-
Stir in the shredded rotisserie chicken, marinara sauce, salt, pepper, garlic powder, and Italian seasoning. Mix well and let simmer for a few minutes.
-
There's two options depending how much time you have - you can add mozzarella and Parmesan cheese to the pan and cover to let it melt. Or, transfer the mixture to a greased deep dish pizza pan or baking dish and top with the cheese, and then bake 20-25 minutes until melted and bubbly.
-
Let cool slightly before serving.
Note
If you are not gluten free and want to use regular flour, omit the mashed sweet potato and use 1 1/4 cup all purpose flour.
