Gluten free pizza bites that are packed with protein!
gluten free pizza bites pinit

If you didn’t already know, I am a huge fan of cottage cheese – I use it in a lot of my recipes to get that extra protein in. So, of course I had to make these gluten free pizza bites made with cottage cheese!! These were SO delicious and surprisingly easy to whip up. It’s technically a “one bowl” recipe but the bowl is your blender. I use my Vitamix or Beast blender when making these types of recipes, but if you don’t have one or a high powered blender, you can definitely use a food processor. I’m not huge on pepperoni, but if I’m going to use it, I try to buy the uncured kind with better ingredients, usually Whole Foods has some options. You can definitely omit the pepperoni, or add different toppings like olives, peppers or any other kind of veggies you like. You are definitely going to want to try this one, let me know in the comments if you’re going to!!

Steps:

  1. Preheat oven to 400F.

  1. Melt the butter. Mince the garlic and stir into the melted butter. Take about 1 tbsp and add it to your blender.

  1. To the blender, add the cottage cheese, 1 cup of the shredded cheese, salt and tapioca flour. Blend until smooth.

  1. Using the rest of the garlic butter, brush each well of the muffin tin so they don't stick, then pour in the batter, filling about half way. Add about a tsp of tomato sauce on top, any toppings, and then sprinkle with shredded cheese.

  1. Bake for 20-30 minutes or until they have puffed up and turned golden brown. Serve with warmed tomato sauce for dipping, if desired.

Note

If you are not gluten free and want to use regular flour, omit the mashed sweet potato and use 1 1/4 cup all purpose flour.
