Mac and cheese is the ultimate comfort food. There is just something so nostalgic and comforting about having a big warm bowl of cheesy, melty mac and cheese – that’s why I’m sharing this recipe for Gluten-Free Baked Mac and Cheese. It’s perfect for a weeknight dinner and the whole family will love it! There are a lot of boxed and frozen mac and cheese options, but like most things I make for my family, I wanted to make mac and cheese from scratch, with real, whole ingredients. I used gluten free pasta, but you can switch it out for regular pasta if you want. I used coconut milk for this recipe, but you can always switch it to cow’s  milk if you prefer it over a dairy substitute. If you swap out the cheese for vegan cheese, then the whole recipe will be vegan! The only thing is I don’t know how well the vegan cheese will necessarily melt to make the cheese sauce, but if you give it a try, let me know in the comments!

Steps:

  1. Preheat your oven to 350°F (175°C).

  2. Cook the gluten-free elbow macaroni according to the package instructions until al-dente. Drain and set aside.

  3. In a saucepan, melt the butter over medium heat. Stir in the gluten-free flour and cook for about a minute until the mixture is smooth and bubbly.

  4. Gradually whisk in the coconut milk, making sure there are no lumps. Cook and stir until the sauce thickens and bubbles.

  5. Remove the saucepan from the heat and stir in 1 1/2 cups of cheddar cheese and the Parmesan cheese until melted. Season with salt, pepper, garlic powder, onion powder, and mustard powder (optional).

  6. Add the cooked macaroni to the cheese sauce and mix until well coated.

  7. Transfer the mac and cheese to a greased baking dish. Sprinkle the remaining cheddar cheese on top. If you want to, sprinkle the gluten-free breadcrumbs over the cheese.

  8. Bake in the preheated oven for about 20-25 minutes or until the cheese is bubbly and slightly golden on top.

  9. Allow the mac and cheese to cool slightly before serving.
