Potato pancakes stuffed with cheese - what could be tastier?

This recipe was so good, they’re cheesy and salty and savory and kinda crispy on the outside… all the good things!! I’m warning you that you won’t be able to just eat one of these cheese-stuffed potato pancakes! They were also pretty easy to make to which is perfect for me and anyone else who needs a quick snack, meal or side dish. I used mozzarella cheese in mine, but you can use cheddar or a different kind of cheese. If you are off dairy, you can also replace the cheese with meat or any other filling you want – use your imagination! Let me know in the comments if you’ll be trying these!!

This recipe for cheese-stuffed potato pancakes is so easy and delicious! You can make these as a meal, snack or side, but be warned, you won't be able to just have one!

  1. Boil the diced potatoes in a pot of water until they are fork-tender. Drain the potatoes well.

  2. In a mixing bowl, mash the boiled potatoes until smooth.

  3. Add butter, milk, potato starch (if using), salt, pepper, garlic powder, and chopped parsley to the mashed potatoes. Mix well to combine all the ingredients.

  4. Divide the potato mixture into equal portions and form each portion into a small patty.

  5. Make a hole in the center of each potato patty and place a cube of cheese in the hole. Mold the potato mixture back around the cheese to seal it inside.

  6. Heat a pan over medium heat and add avocado oil.

  7. Carefully place the stuffed potato patties in the pan and fry them until they are golden brown on one side. Then, flip them over and cook the other side until it's also golden brown and the cheese is melted.

  8. Once the potato pancakes are cooked through and crispy on the outside, remove them from the pan and place them on a paper towel to drain any excess oil.

  9. Serve the cheese stuffed potato pancakes hot, garnished with extra parsley if desired.
