QUICK & EASY CILANTRO LIME CHICKEN RECIPE

I am all about quick and easy dinner recipes that I can make on repeat. I’ve made this cilantro lime chicken before and shared it on Instagram and so many of you have told me that you make it all the time now too! So, I thought I’d share it again and put the full recipe on the blog so more people can find it. This chicken recipe is so easy to make, you just blend up the cilantro-lime marinade ingredients and then let the chicken marinate in the fridge for at least an hour. Of course, if you’re in a rush, you don’t have to let it sit, or you can marinate it for 15-20 minutes, but it will be better if you let it sit for that hour. Also, don’t let it marinate too long, because the acid from the lime juice with start to cook the chicken and that can give it a bit of a weird consistency. So that hour is kind of the sweet spot. LET’S START:

INGREDIENTS:

Chicken breast or thighs
1 cup cilantro
juice from 3 or 4 limes (or lemons)
5 or 6 garlic cloves
1/2 cup olive oil
2 tsp salt
1.5 tsp pepper
1 teaspoon Italian seasoning

STEPS:

  1. Pulse the marinade ingredients in a blender or food processor.
  2. Coat the chicken and marinate in the fridge for about an hour or longer (it’s just better this way but you don’t have to).
  3. Bake covered at 400F for about 40 min and then uncover, raise heat to 425F and bake 15 more minutes or until fully cooked the way you like it.
