Immune boosting chicken noodle soup recipe

This is my favorite soup recipe yet! It’s a high protein, filling, immune boosting soup! You can make it as spicy as you want or not at all. I like spice, so I went for it! It’s a well-balanced meal and so so good for you! The whole family loved it, and yours will too.

What’s also great about this recipe is that you can change up the veggies and broth however you want. I’ve given you my exact recipe below, but feel free to change it.

I used A LOT of ginger and garlic in this soup recipe. I used an entire bulb of garlic and about 2 inches of ginger then minced it, and that’s where a lot of the immune-boosting properties come from! But, if you don’t love ginger and garlic as much as I do, use as much or as little as you’d like.

A LOT of ginger and garlic chopped (I did an entire bulb of garlic and about 2 inches of ginger minced but use as much or as little as you’d like)

1 yellow onion diced
1 tbsp red curry paste
2 carrots in ribbons, or do as you please.
1 zucchini
1/4 cup frozen peas
1 head of broccoli chopped
1 can of coconut milk
1 carton bone broth
Rotisserie chicken shredded (or any kind of chicken, I just made it easy)
Ramen noodles, rice or pho noodles. I used Gluten free ramen.


  1. Start by sauteeing your onion in avocado oil
  2. Add in red curry paste and mix.
  3. Add ginger, garlic and carrot ribbons.
  4. Add coconut milk and let simmer with the veggies.
  5. Add bone broth and spices (salt, pepper, any herbs you like )
  6. I like to cook my noodles separately because I don’t like the milky film but you can cook directly in the soup if that’s your thing.
  7. Add cooked chicken.
  8. Garnish with green onion and Sriracha if you choose!
